So I have been waiting for the perfect moment to make this big announcement. My life has changed drastically for the better. This has been a life-change that is over three years in the making. (and before you start guessing things – no, I’m not pregnant… do you see the boozy coffee amazingness I’m featuring here??) As of three weeks ago, I finally made the decision to leave my day job in order to focus 100% on my own business. And if that’s not a cause for celebration, I don’t know what is! For me, celebration includes many things:
- happy dances
- lots of jumping up and down with my family because I’m so dang excited
- car dancing with the windows down and music blaring
- amped up boozy coffee in the middle of the day just because I can… because I’m my own boss and I said so!
No but seriously, I have been celebrating this life change ever since I made the decision to leave my job. The company I worked for over the last 6 years was absolutely wonderful, and I loved everything about it. Except for the fact that I was not my boss. I was not in charge. I didn’t call the shots. And well, that was a life-sucker for me. Ever since I can remember, I’ve had an entrepreneurial soul. What 10 year old goes to the book store or library looking for books on making money and starting their own business? This girl, that’s who! Whether it was a jewelry-making business or trying to find a service I could offer in order to make money on my own, I was all for it. It’s just always been in my blood. So when I found that I actually had an extreme passion for helping others become healthy, I knew I had finally figured it out. I found the one thing that I wanted to do for the rest of my life, and that was helping people. Helping people find their happy. So to finally be at a place where I can focus on that is an absolute joy. And honestly, my absolute favorite way to celebrate a special occasion is with a fancy schmancy drink. The only thing I have to ask of you right now is to run to your kitchen right now and mix your coffee beans with your Everclear®. Right now… I’ll wait… (of course, check the recipe for proper measurements!) Ok… ya back? In 5 days from now you will have the most delicious coffee liquor that will turn a regular old coffee into this frosty masterpiece. Using Everclear® to make the liquor is the perfect choice because of it’s neutral flavor. Letting the coffee beans sit for a few days is all you need to do in order to make a spiked coffee liquor suited for all sorts of celebration.
- 2 cups Everclear
- 1/2 cup coarsely ground coffee beans
- 1/2 cup whole coffee beans
- 2 ounces coffee liquor
- 1 cup silk dark chocolate almond milk
- 1 cup coffee
- 1/2 teaspoon stevia
- 1-2 cups ice
To make the coffee liquor, combine Everclear with ground coffee beans and whole coffee beans in a jar that can be closed and is air-tight. Swirl around to stir and leave at room temperature for at least 2 days, but preferably 5. Give it a little shake every day.
When you are ready to make the drink, combine the drink ingredients in a blender and blend until ice is chopped and the drink is slushy.
Pour evenly between two glasses and serve immediately.
