Of course, there’s always the option of using a pancake mix. Did you know that Bisquick pancake mix is actually vegan?

It does call for the addition of milk and eggs, but there are ways to get around that with some vegan substitutions.

But when it comes down to it, when I look at the ingredient list in Bisquick, I’m not 100% sure what everything is:

bleached wheat flour (enriched with niacinironthiamine mononitrateriboflavin and folic acid), corn starchdextrose, palm oil, leavening (baking sodasodium aluminum phosphatemonocalcium phosphate), canola oil, salt, sugar, DATEM, and distilled monoglycerides

Looking at the ingredients we highlighted above, I know what every single item in that list is. Now we just have to put it all together.

And it couldn’t be simpler!

  1. In a large bowl, whisk together the flour, baking powder, cinnamon, and sugar.
  2. Mash the bananas in a small bowl and add them into the large bowl along with the vanilla, oil, non-dairy milk, and water.
  3. Whisk until the pancake mixture is fully combined. If the mixture is too thick, add in an additional 2 Tablespoons of water and stir in.
  4. Heat a griddle or large non-stick skillet to medium heat.
  5. Once hot, melt a small amount of vegan butter in the pan.
  6. Scoop 1/4 cup of the batter onto the heated pan or griddle and cook for 2-4 minutes on one side. Once the sides of the pancake starts to bubble and look slightly dry, it’s time to carefully flip it with a large spatula.
  7. Allow the pancake to cook for an additional minute or two before flipping once more to ensure the pancake is fully cooked.Repeat until all the pancakes have been cooked.

  • Make sure you cook them long enough! What’s worse than biting into a pancake and realizing it’s not cooked all the way through? Not much. Unless we’re talking about biting into under-baked french toast – cause that’s about as bad! Keep your heat on medium, and make sure the edges are dry and bubbled up before flipping the pancake.
  • Make sure you’re measuring flour the correct way. Instead of scooping the flour out with the measuring cup, be sure you’re spooning out freshly fluffed flour into your measuring cup to ensure best results. Scooping with the measuring cup will have you ending up with more flour than the recipe calls for.
  • Use the right type of pan – I really like using an electric griddle to get as many pancakes on the pan at a time. Alternatively, you could use a cast iron skillet to ensure the most even heating.
