  • Whisk together flour, baking powder, cinnamon, and sugar in a large bowl.
  • Add the mashed bananas to the dry ingredients along with the vanilla extract, vegetable oil, non-dairy milk, and water.
  • Whisk until completely combined. If the batter is too thick, stir in 2 tablespoons of water.
  • Heat a non-stick skillet over medium heat.
  • Melt a small amount of vegan butter on the hot pan.
  • Scoop 1/4 cup of pancake batter onto the pan and cook for 2 to 4 minutes on one side. Once the pancake starts to bubble, flip it carefully with a spatula. Cook the other side for 1 to 2 minutes, then flip it once more to ensure the pancake is cooked through.
  • Repeat with the remaining batter.
  • Serve your vegan banana pancakes with whipped cream, sliced bananas, and maple syrup. Enjoy!

Notes

  • If you use too much flour, the vegan pancakes will be heavy. On the other hand, using too little flour will create pancakes that spread too much. To ensure an accurate measurement, use the spoon and level method for the flour instead of scooping it out with your measuring cup.
  • You can flip the banana pancake once you notice bubbles on its surface and its edges are dry and defined. Cooking over medium heat is also important to avoid burning the vegan butter, which can make the pancakes look ready for flipping before they actually are.
  • You can keep the leftover vegan banana pancakes in an airtight container in the fridge for up to 3 days. You can also freeze these delicious pancakes for 1 month!
