Vegan Tater Tot Nachos - aka totchos

Vegan Totchos (or tater tot nachos) have everything you love about the classic nacho recipe but there’s a twist. Meat-free. Cheese-free. But absolutely not flavor free! 

This pan of ultimate comfort food is bursting with flavor that you will not be able to deny. The fresh tomatoes that burst with fresh flavor in every bite. The vegan cheese sauce that in itself is full of tons of flavor. The creamy avocado that offers a texture change. And really, who doesn’t just love potatoes?!! Put it all together, and you have magic in every bite.

Yeah, I get it, it’s a lot of carbs. Ain’t no denying that one. But you know what – this is not a low carb site. It’s not a low-anything site… well, I guess it’s a low-meat site ha! Point is, we aren’t worrying about our macros. We’re just listening to our cravings, veganizing them, and feeding our bodies in the best way we know how.

And this time, the craving is for VEGAN TOTCHOS!

What the hell are Totchos?

Tater tots + nachos = a big ole lovely dish of TOTCHOS! I mean, who doesn’t love those little potato morsels? And who doesn’t love nachos? They’re both quite magical, and it only makes sense to bring them together in holy matrimony to create the totcho. 

Can I use different toppings to customize my Totchos?

1000 times yes! Please do. 

Y’all. Recipes are just guidelines, and especially ones like this. It’s totally customizable to fit your unique tastebuds.

Think of your favorite nacho ingredients. The ultimate nacho plate. What’s on it? Is it loaded up to the max? Is it just a few toppings? Whatever your preference is, take those toppings and throw them on tater tots instead of tortilla chips. 

You 100% don’t have to follow my ingredient list. Just follow the method with the ingredients you love most and you’ll be good to go.

A few additional topping ideas:

  • black olives
  • meatless chili
  • jalapenos
  • banana peppers
  • green tomatillo sauce (aka vegan cafe rio dressing)
  • vegan taco meat
  • refried beans

It’s really an endless list. You do you boo.

Are Tater Tots vegan?

So – this one was a little surprising to me. I thought for sure tater tots would be 100% vegan, no issues at all. Upon further investigating, I noticed that many of the tater tot packages listed a milk derivative in the ingredients list.

Please be sure you’re reading the ingredients carefully before just picking up a package of frozen tater tots, assuming it’s all just shredded potatoes.

Definitely shocked me, so I thought I’d warn you. There are vegan tater tots out there, but you gotta look for them. I’m sure you’ll find at least one package at your local grocery store.

What do you eat tater tots with?

Oh tater tots. They can be eaten in so many ways. Totally basic with ketchup. With vegan cheese sauce. A lot of people make a tater tot casserole with tater tots as the base. I like dipping them in Utah’s famous “fry sauce.” Mayo + ketchup. Of course, I use a vegan mayo, and it’s quite amazing!

What are the ingredients in Tater Tot Nachos?

  • frozen tater tots – like I said above, make sure you’re checking the ingredients
  • black beans – lots of protein here
  • corn – i LOVE the flavor of corn, but you could totally omit if you’re not into it
  • cherry tomatoes – oh! when these cherry tomatoes burst in your mouth, the flavor is so sweet and fresh
  • salsa – a staple for all my nachos!
  • vegan cheese sauce – make your own or buy a vegan cheese sauce from the store.
  • avocado – healthy fats for the win!
  • green onions – i mean, I’m always a fan of these little guys!

Make sure you read above about customizing the vegan totchos exactly to your liking! You definitely don’t have to do it my way.

How do you make Vegan Totchos?

  1. Preheat oven to 425.
  2. Place frozen tater tots in a 9×13 baking pan and bake for 15 minutes in preheated oven.
  3. Remove from oven and top with beans, corn, halved tomatoes, salsa, and 3/4 cup cheese sauce. Return to the oven for 12-15 minutes until tomatoes have burst.
  4. Remove and top with avocado, green onions, and remaining 1/4 cup cheese sauce.

Ingredients

  • 32 ounces frozen tater tots
  • 15 ounce can black beans, drained and rinsed
  • 15 ounce can corn, drained
  • 1 pint cherry tomatoes, halved
  • 1 cup salsa
  • 1 cup vegan cheese sauce, divided (3/4 + 1/4 c)
  • 1 avocado, pitted and diced
  • 3 green onions, thinly sliced
  • handful cilantro, chopped

Instructions

  1. Preheat oven to 425.
  2. Place frozen tater tots in a 9x13 baking pan and bake for 15 minutes in preheated oven.
  3. Remove from oven and top with beans, corn, halved tomatoes, salsa, and 3/4 cup cheese sauce. Return to the oven for 12-15 minutes until tomatoes have burst.

Notes

Vegan Cheese sauce can be made ahead of time or you can use store-bought.
