- 32 oz frozen vegan tater tots
- 1 15-oz can black beans, drained and rinsed
- 1 15-oz can corn, drained
- 1 pint cherry tomatoes, halved
- 1 cup salsa
- 1 cup vegan cheese sauce, divided into 3/4 and 1/4 cups
- 1 avocado, pitted and diced
- 3 green onions, thinly sliced
- A handful of cilantro, chopped
Instructions
- Preheat the oven to 425°F.
- Arrange the tater tots in a 9 x 13 baking pan. Bake for 15 minutes.
- Remove the tater tots from the oven and top with beans, corn, tomatoes, salsa, and 3/4 cup of cheese sauce.
- Return to the oven and bake for another 12 to 15 minutes or until the tomatoes burst.
- Remove from the oven and top your vegan totchos with avocado, green onions, cilantro, and remaining cheese sauce. Enjoy!
