This mixture can then be used in place of eggs, and it helps bind the meatless meatballs together without using any actual animal product.

Lentils are also super budget friendly, especially if you buy them in bulk, so they’re great to just keep on hand. You can also buy them already cooked in cans for convenience sake.

Quick Oats – Quick oats are just regular old-fashioned oatmeal that has been chopped up into smaller pieces. This makes it easier for our bodies to break down and digest, which is why I use it in these meatless meatballs, as we’re not cooking the oats in water like you would in oatmeal.

Seasonings – Seasonings are totally your preference when it comes to cooking. You can play around with the ratios, or even add more of a kick with some chili powder or cayenne.

Make a double batch

  • 3 Tablespoons water
  • 1 teaspoon sea salt
  • 2 1/2 cups cooked lentils (about 1 cup uncooked lentils)
  • 1/2 small yellow onion diced
  • 3 cloves garlic minced
  • 1 cup quick-cooking oats
  • 3/4 cup grated vegan parmesan cheese
  • 8 ounces unsweetened tomato sauce
  • 1 Tablespoon Italian seasoning
  • 1 teaspoon garlic salt
  • 1 teaspoon red pepper flakes (optional)
  • 1/4 teaspoon black pepper
