Dark Chocolate Chips: You can use any type of dark chocolate chips for this recipe. I used 70% dark chocolate, but you could also use 60% or 80% dark chocolate.

White Chocolate Chips –  You could also use dark chocolate chips or vegan white chocolate chips from Enjoy Life. 

Coconut Oil –  This helps the chocolate chips melt smoothly, plus when it’s refrigerated, it hardens! This creates a chocolate shell on top. 

Flaky Sea Salt – You don’t want to miss out on adding this flaky sea salt to top the peanut butter cup.

Step-by-Step Instructions for Healthy Rice Cake Snacks

Step 1: Place the chocolate chips in a small microwave-safe bowl along with ¼ teaspoon of coconut oil. Microwave in 15-second intervals until melted. Repeat with the white chocolate chips.

Step 2: Spread the nut butter onto the rice cake then top with the melted dark chocolate. 

Step 3: Place in the freezer for 5 minutes until the chocolate is set then drizzle with the melted white chocolate.

Step 4: Sprinkle with sea salt then freeze for 10 minutes. Serve immediately or store in an airtight container in the refrigerator for up to 3 days.
