Chewy Granola Bar Bites
Ingredients
- 1/2 cup pitted dates
- 1 cup water
- 1 small or medium banana
- 1 cup all-purpose flour
- 1 1/4 cup oats
- ½ cup raisins
- ½ cup vegan chocolate chips
- ½ cup pumpkin seeds
- 3 tbsp maple syrup
- 1 tbsp molasses
- 1 tsp sea salt
Instructions
- Preheat the oven to 350°F. Line a baking dish with parchment paper.
- Add the water and dates to a pot and bring to a low simmer over medium heat for 5 to 8 minutes, stirring frequently. Set aside.
- In a small bowl, mash the banana with a fork.
- Add the mashed banana to a large mixing bowl and combine with flour, oats, raisins, chocolate chips, pumpkin seeds, maple syrup, molasses, and sea salt.
- Blend the water and dates into a smooth puree.
- Add the puree to the banana oat mixture. Mix to form a thick, dense batter.
- Press the batter evenly into the lined baking dish. You can add more chocolate chips, pumpkin seeds, and raisins on top.
- Bake for 15 to 20 minutes or until the center feels firm. The sweet spot is usually 18 minutes.
- Allow to cool, then slice into bars or bites.
