Preheat the oven to 350°F. Line a baking dish with parchment paper.
Add the water and dates to a pot and bring to a low simmer over medium heat for 5 to 8 minutes, stirring frequently. Set aside.
In a small bowl, mash the banana with a fork.
Add the mashed banana to a large mixing bowl and combine with flour, oats, raisins, chocolate chips, pumpkin seeds, maple syrup, molasses, and sea salt.
Blend the water and dates into a smooth puree.
Add the puree to the banana oat mixture. Mix to form a thick, dense batter.
Press the batter evenly into the lined baking dish. You can add more chocolate chips, pumpkin seeds, and raisins on top.
Bake for 15 to 20 minutes or until the center feels firm. The sweet spot is usually 18 minutes.
Allow to cool, then slice into bars or bites.
Notes
Line the baking dish with parchment paper that's a bit larger. This way, you can use the overhang on each side to lift the granola bar bites out of the baking dish.
Allow the granola bars to cool for easier cutting. If you cut them while they're still warm, they will fall apart.
You can store these chewy granola bar bites in an airtight container for up to 4 days.
