Sometimes when I am finished with a workout, I have a hard time with food. I just worked up a sweat, I feel like I could eat a house, and there’s absolutely nothing already made. So I need quick things. If I’m not careful, those quick things end up being a handful of Oreos while I’m figuring out what to make for dinner. Talk about ruining the workout!

But cookies are just so convenient! And well… yummy…

So I came up with a solution that lets me have my cookies and eat them too! [Read more…]

Oh.em.gee. Peanut Butter. on everything!

I seriously have a bit of a problem, although it’s a problem I’m totally okay with having. I’m all about sitting down with a good book, a jar of peanut butter, a box of graham crackers, and a knife to slather those crackers with the good stuff. Don’t judge! This natural 3-ingredient peanut butter totally makes it okay.

Oh but yeah, speaking of curling up with a good book. [Read more…]

Coconut Milk Strawberry Ice Cream over Honey Orange Biscuit

Coconut Milk Strawberry Ice Cream over a Honey Orange Biscuit. Hard to believe this decadent treat is practically guilt-free! |

You know me. I love dessert. And I also love being healthy. I refuse to give up dessert in my journey to a healthy life, and I encourage all around me to do the same. That is why I’m always on the hunt for ways to turn unhealthy treats into lighter fare that still tastes fan-freakin-tastic. I also refuse to sacrifice flavor just to make something a bit healthier.

I “met” Brianne over the internet a few years back at an online conference, and I have always been so impressed with her healthy recipes and the fun lunches she packs for her son. So when Brianne from Cupcakes & Kale Chips asked me to make a healthy dessert for her blog, I was absolutely ecstatic!

Healthy desserts. Kind of sounds like an oxymoron, right? The thing is, I absolutely love taking those ooey-gooey sweet treats and finding a way to make them healthier. It really is so simple to do once you learn a few tips and tricks around the kitchen. All you have to do is substitute some of the nutrient-lacking ingredients for ingredients with a little more nutritional value.  [Read more…]

I swear, I thought people said things were supposed to get less stressful and less busy after the holidays. I’m officially angry with every single person who told me it would slow down after the new year. Okay, so not really angry, but definitely disappointed. What I wouldn’t give for a slow week… heck, I’d even take a day!

But this year so far I’ve added even more to my plate! I’m working out 6 days a week, something that is making me both incredibly energetic and exhausted all at the same time. I’m so happy to be back into the swing of things.

Plus I’m working on an amazing project that is going to change your life. Seriously. Get excited!

I’m also taking both a blogging class and a photography class.

And of course all the normal daily working mom things I get to do.

It is definitely time for me to find a way to slow down and take a moment for myself this weekend! [Read more…]

5 Reasons Why You Should Throw Away Your Scale

5 Reasons Why You Should Throw Away Your Scale - it truly does more harm than good. It's time to give it the boot! |

Your scale. You know that awful thing staring at you from the corner of your bathroom. My guess is that either you avoid it like the plague because you’re scared of the numbers. Or you are on it obsessively trying to monitor your weight. I have been on both ends of the spectrum.

There was a period of time when I would weigh myself every hour on the hour just to be sure the needle didn’t go up at all. And if I was lucky, maybe it would go down.

And then there were long stretches of time when I wanted to know how much I weighed but I was terrified of how far that needle would rise. So I just ignored it and was in denial about my weight gain.

Here’s the thing. You don’t need a scale. A scale could ruin you and your ability to get healthy and happy… especially happy! [Read more…]

Healthy Crispbread Snack Ideas - how many ways do you think you can top yours? |

There’s definitely no lack of healthy recipes all over the internet these days.  Healthy breakfasts, lunches, and dinners galore. Everyone’s on the health train.

The thing though… I want to eat all.the.time! I’ve been working out six days a week, and I’m pretty much hungry all the time. I eat small little meals about every 2-3 hours. No way do I want to make a whole meal every time I’m hungry. I need the quick and easy. But still healthy real food. [Read more…]

Vegetarian Lentil Meatloaf

Vegetarian Lentil Meatloaf - this is some serious comfort food that's actually good for you! |

As you may remember, my wife and I were apart for about 7 months in 2014 due to her military training away from home. As you can imagine, that was one of the roughest times of my life. We truly do  everything together. She’s my best friend, and being apart for so long was hard on us both.

One of the hardest parts for her honestly was the food. During basic training, she had to learn how to eat meals in less than ten minutes. At that point, you’re basically just shoveling and swallowing a full meal that would fuel you through all your training. And on top of that, getting down 3 glasses of fluid. Let’s just say, food turned into something dreadful and not so pleasant. Many of her letters home said how much she missed my home-cooked meals and just being able to enjoy food. [Read more…]

So there’s this thing that happens at the beginning of every year, as I’m sure you’re well aware of. The health craze begins. After at least a month of holiday parties, Christmas cookies, and too many indulgences, the world goes into some sort of crazy “I’ve gotta fix this” mode. Restrictive diets are planned. Everyone’s eating more kale. You can’t find a parking spot at the gym because everyone has signed up for a new membership and decides that THIS is the year they’re finally going to get healthy. This is how it goes every single year.

The problem I have with this whole thing?

I’m not ready to give up sweets. [Read more…]

Top Ten Reasons Why Diets Suck!

Top 10 Reasons Why Diets Suck -

Beginning of the year. All these health-related resolutions are made. New workout programs. New eating regimes. New weight loss goals. It’s pretty much all people are talking about these days.
You know what else I’m hearing though? The nasty D word! You know what I’m talking about. The one that you feel guilty about every time it’s uttered. The one that you’re not “good enough” at. The one you’ll probably honestly quit within the next few weeks…

Yeah – DIET. That’s the one.

I personally hate the word. Just hearing it makes me cringe. [Read more…]
