- 1 bag of frozen sweet potato tots (I like Alexia brand because there aren't many additional ingredients added to the sweet potatoes)
- black beans , drained and rinsed
- sour cream
- shredded cheese
- green onions , chopped
Preheat waffle iron. Spray with non-stick spray.
Place about 1 cup of frozen sweet potato tots into the preheated waffle iron so they cover the iron. Close the iron and turn as you would when making waffles per the manufacturer's instructions.
Once sweet potatoes are completely thawed, cooked through, and browned, carefully place a plate over the waffle and flip iron over to remove. Use hot-pads or a thick towel. Trying to remove the sweet potato with a fork or tongs may result in it falling apart.
Top with your favorite southwestern toppings.
