I love smoothies. I could drink one for every meal. I wish I could drink one to start each and every morning to start my day off. Unfortunately, though, I leave the house at 6:30 in the morning while everyone’s sleeping, and I’m pretty sure they wouldn’t appreciate the very noisy sound of the blender+ice to wake them from their slumber. So instead, I have a small smoothie as an after work and school snack with my son many afternoons.
And then there’s Saturdays. My favorite day of the week. Saturdays are my day. My son is with his dad, and the wife is at work, so I have free reign of the entire day. It’s usually full of yoga, blogging, reading, watching food documentaries and Cupcake Wars, and of course eating the greenest of greenest food possible. My family does a great job at putting up with my meatless meals, and I do my best to make them as family-friendly as possible, but I know that on Saturdays, I don’t have to cater to anyone but myself.
So what did I make myself this Saturday? I thought of everything green I could to put in this smoothie. If my green grapes hadn’t rang up for eleven dollars, they would have been thrown in the mix (so feel free if you’re so financially inclined – it just wasn’t happenin’ for this budget). Veggies, fruit, and leafy greens. It all got thrown in the mix without a second thought. I knew it would be delicious.
You should have seen me in my excitement. I was starving after yoga and a quick stop for the produce, so when I got home, it was frantic. I took my shoes off, but the scarf and coat remained on. There was no time to bother with coat removal. Prepped the fruit, hurried and photographed it. Blended super quickly, photographed as fast as I could, coat still on.
Finally when that last shot was taken, I threw a straw in the smoothie, took of my coat and scarf, and settled in for my deliciously healthy treat. Seriously, guys. Creamy, sweet, and fresh. You drink a smoothie like this and just feel the vitamins radiating through your body. So clean and tasty.
Green Goddess Smoothie
makes 2 servings

Ingredients
1 cup ice water
1 scoop vanilla protein powder (optional)
3/4 cup fresh spinach
1 celery stalk, roughly chopped
1 kiwi, peeled and sliced
1/2 green apple, cored, roughly chopped
1/2 green pear, cored, roughly chopped
1/2 cucumber, peeled and chopped
1/2 avocado meat
8-10 ice cubes
Directions
In a high-speed blender, place all ingredients in the order they are listed. You want to make sure the spinach is weighted down by all the other ingredients to ensure everything gets mixed without chunks of spinach leaves.
Blend on high speed for about 45-60 seconds and enjoy in a tall glass. You can divide into 2 glasses or save half for later. When you’re ready to drink the remaining juice (within 24 hours), throw in 6 ice cubes and re-blend.
If you’re using a Blendtec*, there is a smoothie button you can just push and it will do all the work for you while you clean up.
And for the record, the Mrs tried this out the following morning and loved it. So it’s not just for the super green and crunchy granola folk like myself. It’s perfect for your spouses and your kids as well. (Just don’t tell them what’s in it!)
** I only have experience using a Blendtec blender for this smoothie. I cannot guarantee the same results with a blender that’s not quite as high-speed as the Blendtec. The great thing about this blender (among other things) is that you literally throw everything in the blender, push a button, and walk away. It does all the work for you.
