PICKLED PINEAPPLE

INGREDIENTS

– 1 pineapple diced – 1½ cups apple cider vinegar – 3 limes juiced – 1 jalapeño diced – 2 teaspoons salt – 1 tablespoon sugar – 3 tablespoons cilantro chopped (just the leaves)

STEP 1

Chop pineapple into cubes, discarding the core.

STEP 2

Heat vinegar and water in a saucepan until boiling. Remove from heat and add sugar, salt, and lime juice.

STEP 3

Place diced pineapple, cilantro, and jalapeño in a large glass jar or container.

STEP 4

Pour vinegar mixture over pineapple to cover. Let come to room temperature, then chill in the fridge overnight.
