Whole Wheat Greek 

Yogurt  Pancake

INGREDIENTS

– 1 3/4 cups whole wheat pastry flour – 1 cup oat flour (1 cup old-fashioned oats blended to a powder) – 2 teaspoons sugar – 1 Tablespoon baking powder – 1/2 teaspoon baking soda – 1/2 teaspoon salt – 1 3/4 cup almond milk (or your milk of choice) – 1/2 cup plain , lowfat Greek yogurt – 4 Tablespoons canola oil – 1 teaspoon  vanilla extract

STEP 1

Whisk whole wheat pastry flour, oat flour, sugar, baking powder, baking soda, and salt in a large bowl.

STEP 2

In a small bowl, whisk milk, yogurt, oil, and vanilla until combined. Pour liquid mixture into dry ingredients and stir with a fork until just mixed.c

STEP 3

Heat a cast-iron skillet or non-stick griddle over medium heat and coat with butter. Drop 1/4 cupfuls of batter onto the skillet, 2 inches apart.

STEP 4

Cook until edges are set and bubbles form, about 2-3 minutes. Flip and cook 1-2 minutes more until golden.
