Chewy Granola

INGREDIENTS

– 1/2 cup pitted dates – 1 cup water – 1 small or medium banana – 1 cup all-purpose flour – 1 1/4 cup oats – ½ cup raisins – ½ cup vegan chocolate chips – ½ cup pumpkin seeds – 3 tbsp maple syrup – 1 tbsp molasses – 1 tsp

STEP 1

In a pot, bring water and dates to a low simmer over medium heat for 5-8 minutes, stirring frequently. Set aside.

STEP 2

In a small bowl, mash the banana with a fork.

STEP 3

In a large mixing bowl, combine the mashed banana, flour, oats, raisins, chocolate chips, pumpkin seeds, maple syrup, molasses, and sea salt.

STEP 4

Blend the water and dates into a smooth puree.

STEP 5

Add the date puree to the banana oat mixture. Mix to form a thick, dense batter.

STEP 6

Press the batter evenly into a lined baking dish. Optionally, top with more chocolate chips, pumpkin seeds, and raisins.

STEP 7

Bake at 350°F for 15-20 minutes, until the center feels firm. The ideal baking time is usually 18 minutes.

STEP 8

Allow to cool, then slice into bars or bites.

Tips for Making Granola Bar Bites:

– Allow the granola bars to cool for easier cutting. If you cut them while they’re still warm, they will fall apart.
