Combine the almond milk and apple cider vinegar in a small bowl and set aside for 5 minutes to make the vegan buttermilk.
In a separate small bowl, combine the flaxseed and water. Set aside.
In a large bowl, whisk together the dry ingredients.
Add the vegan buttermilk, flax egg, coconut oil, and vanilla extract to the flour mixture. Mix and allow to rest for 5 minutes.
Spray the waffle iron with non-stick cooking spray. Cook 1/2 cup of batter in the preheated waffle maker according to the waffle maker's instructions.
Repeat with the rest of the batter.
Serve your vegan waffles with whipped cream, fresh berries, and maple syrup. Enjoy!
Notes
Do not overmix your batter to avoid tough, chewy vegan waffles! Mix just until combined.
The waffle is ready once your trusty waffle maker is no longer steaming. Until then, do not open the waffle maker, even if the indicator says it's done.
Do not stack the freshly cooked waffles until you're ready to serve them! While you're cooking the rest of the batter, you can keep the fluffy vegan waffles on a baking sheet in the oven at 200°F.
