Vegan No Bake Cookies
These vegan no bake cookies are chewy and full of peanut butter and cocoa goodness! The dough comes together in 1 pan with just 6 simple ingredients.

Melt the peanut butter, agave, and coconut oil together in a saucepan over low heat, stirring occasionally.
Turn the heat to medium and bring to a low boil, stirring constantly.
Let boil for 1 minute, then remove from heat.
Fold in the vanilla extract, quick oats, and cocoa powder. Stir until well combined.
Roll into tablespoon-size balls and arrange on a parchment-lined baking sheet.
Lightly flatten the cookies with the back of a spoon. Place in the fridge for at least 30 minutes to set. Serve and enjoy!
- You can use refined or virgin coconut oil, but refined is best to avoid any hint of coconut flavor in your cookies.
- These vegan no bake cookies are adaptable! Come up with your own flavor variations and fold in dark chocolate chips or shredded coconut! You can even make cinnamon raisin cookies.
