This easy Thanksgiving burger recipe features delicious patties made from leftover stuffing! It's like having the entire Thanksgiving feast between buns.

Instructions

  • Add the black beans to a food processor and pulse until roughly chopped. You can also mash them in a bowl using a fork.
  • Next, add the red bell pepper, onions, and garlic and process to form a paste.
  • Transfer the black bean mixture to a large mixing bowl. Add the egg, seasonings, and leftover Thanksgiving stuffing.
  • Mix the ingredients with your hands until well incorporated.
  • Divide the mixture into patties, around 1/3 cup each.
  • Fry the patties on a non-stick griddle over medium heat for 5 to 8 minutes or until brown. Flip and cook the other side.
  • To assemble, stack your bun with a vegetarian patty, mashed potatoes, green beans, and gravy.
  • Finally, top with another bun, and enjoy!

Notes

  • Make sure the black beans are mashed well for a cohesive mixture. You can also chill the burger mixture in the fridge so it's firmer and easier to handle.
  • Another way to cook the stuffing patties is to bake them in the oven at 375°F for 10 minutes on each side.
  • Transfer your Thanksgiving leftover patties to an airtight container and store them in the fridge for up to 4 days. You can also freeze the patties for up to 2 months.
