Add the black beans to a food processor and pulse until roughly chopped. You can also mash them in a bowl using a fork.
Next, add the red bell pepper, onions, and garlic and process to form a paste.
Transfer the black bean mixture to a large mixing bowl. Add the egg, seasonings, and leftover Thanksgiving stuffing.
Mix the ingredients with your hands until well incorporated.
Divide the mixture into patties, around 1/3 cup each.
Fry the patties on a non-stick griddle over medium heat for 5 to 8 minutes or until brown. Flip and cook the other side.
To assemble, stack your bun with a vegetarian patty, mashed potatoes, green beans, and gravy.
Finally, top with another bun, and enjoy!
