  • Stir together the onion, garlic, and jackfruit in the bowl of the slow cooker.
  • In another small bowl, combine the coconut sugar, seasonings, spices, and orange juice. Pour the mixture into the slow cooker.
  • Cover and cook on Low for 7 to 9 hours or on High for 3 to 4 hours.
  • Shred the jackfruit with two forks.
  • To assemble, fill your tortillas with the vegan jackfruit carnitas and top with coleslaw mix, avocados, cilantro, and salsa. Enjoy!

Notes

  • Make sure your canned jackfruit is young, green, or unripe. Ripe jackfruit is too sweet and soft for vegan taco meat.
  • For crispy slow cooker jackfruit carnitas, broil them in the oven for 5 minutes or until the jackfruit is lightly browned and charred to your liking!
  • What toppings go on jackfruit tacos? You can add some shredded lettuce, pickled red onions, and a drizzle of non-dairy sour cream on top of these vegan tacos. Don't forget to serve with some lime wedges for a squeeze of fresh lime juice!
