This slow cooker jackfruit tacos recipe will satisfy your cravings for carnitas tacos with almost no effort. It's so good, even meat lovers will be hooked!
Stir together the onion, garlic, and jackfruit in the bowl of the slow cooker.
In another small bowl, combine the coconut sugar, seasonings, spices, and orange juice. Pour the mixture into the slow cooker.
Cover and cook on Low for 7 to 9 hours or on High for 3 to 4 hours.
Shred the jackfruit with two forks.
To assemble, fill your tortillas with the vegan jackfruit carnitas and top with coleslaw mix, avocados, cilantro, and salsa. Enjoy!
Notes
Make sure your canned jackfruit is young, green, or unripe. Ripe jackfruit is too sweet and soft for vegan taco meat.
For crispy slow cooker jackfruit carnitas, broil them in the oven for 5 minutes or until the jackfruit is lightly browned and charred to your liking!
What toppings go on jackfruit tacos? You can add some shredded lettuce, pickled red onions, and a drizzle of non-dairy sour cream on top of these vegan tacos. Don't forget to serve with some lime wedges for a squeeze of fresh lime juice!
