Heat the olive oil in a saute pan over medium-high heat.
Add the chopped onion and bell pepper. Season with salt and pepper. Saute for about 7 minutes, stirring frequently.
Once the veggies have softened, stir in the minced garlic and cook for about 1 minute until fragrant.
Transfer the sauteed vegetable mixture to a blender. Add the nutritional yeast and tofu and blend until smooth. Easy peasy! Serve with steamed broccoli or tortilla chips.

Enhance the cheesiness of your silken tofu sauce by adding various herbs and seasonings like paprika, turmeric, thyme, and dill.
If your silken tofu cheese sauce is too thin, add more nutritional yeast until it reaches your desired consistency. But if it's too thick, you can add a bit of unsweetened dairy-free milk, like oat milk.
