Add the vinegar and water to a saucepan and bring to a boil over medium heat.
Once boiling, remove from the heat and add the salt, sugar, and lime juice. Stir to combine.
Add the diced pineapple, cilantro, and jalapeno to a large glass jar and pour in enough vinegar mixture to cover the pineapple.
Let your pickled pineapple come to room temperature, seal the jar, then place it in the fridge. Chill overnight to allow the flavors to develop.
Notes
Fresh pineapple is best for this pickled pineapple recipe (sorry, canned pineapple chunks.) Ripe pineapple smells sweet and has a firm yet tender texture that holds up well when pickled.
Make sure the pineapple chunks are completely covered in pickling liquid to help them retain their color and texture.
For a less spicy pickled pineapple, remove the jalapeno seeds.
