Pickled Pineapple

  • Add the vinegar and water to a saucepan and bring to a boil over medium heat.

  • Once boiling, remove from the heat and add the salt, sugar, and lime juice. Stir to combine.

  • Add the diced pineapple, cilantro, and jalapeno to a large glass jar and pour in enough vinegar mixture to cover the pineapple.

  • Let your pickled pineapple come to room temperature, seal the jar, then place it in the fridge. Chill overnight to allow the flavors to develop.

Notes

  • Fresh pineapple is best for this pickled pineapple recipe (sorry, canned pineapple chunks.) Ripe pineapple smells sweet and has a firm yet tender texture that holds up well when pickled.
  • Make sure the pineapple chunks are completely covered in pickling liquid to help them retain their color and texture.
  • For a less spicy pickled pineapple, remove the jalapeno seeds.
