CORN SALAD RECIPE

INGREDIENTS

– 2 Tablespoons vegan butter – 4 cups frozen corn or 5-6 ears of freshly shucked corn – 1/2 teaspoon chili powder – 1/4 teaspoon smoked paprika – 1/4 teaspoon garlic salt – 2 Tablespoons freshly squeezed lime juice – 3 Tablespoons vegan mayonnaise – 1/4 red onion diced – 2 green onions thinly sliced – 1 jalapeno thinly sliced – 1/4 cup chopped cilantro – 1/3 cup crumbled vegan feta feta cheese optional

STEP 1

Heat butter in a large skillet over high heat. Add corn and let it brown without stirring for 5 minutes.

STEP 2

Stir in chili powder, paprika, and garlic salt. Cook for 30 seconds until fragrant.

STEP 3

Transfer corn to a large bowl. Add lime juice, mayonnaise, onion, green onion, and jalapenos. Toss to combine.

STEP 4

Stir in cilantro and feta (if using). Taste and adjust salt if needed. Serve immediately or refrigerate until ready to serve.

Tips for Making Vegan Street Corn Salad:

Can be served hot or cold. You can also make this totally raw without cooking the corn first, either with fresh corn or thawed frozen corn.
