INGREDIENTS

– 3 tablespoons vegan butter – 1 yellow onion diced – 1 stalk celery diced – 3 cloves garlic minced – ½ teaspoon cayenne pepper – 1 pinch freshly ground nutmeg – 1 teaspoon seasoning salt – 2 pounds Yukon gold potatoes cubed – 1 15-ounce can white bean – 4 cups vegetable broth – 1 cup unsweetened plain almond milk – 4 ounces vegan sour cream – salt and freshly ground black pepper to taste – vegan cheddar optional – chives optional – extra vegan sour cream optional

STEP 1

Heat butter in Dutch oven; sauté onion, celery, and garlic.

STEP 2

Add cayenne, nutmeg, seasoning salt, potatoes, beans, and broth; simmer covered for 20 mins.

STEP 3

Stir in almond milk, sour cream; optionally puree soup. Season with salt, pepper; top with desired toppings.
