VEGAN FRENCH TOAST

INGREDIENTS

– 2 Tablespoons ground flax seed – 1 cup plain unsweetened almond milk – 1 Tablespoon sugar – 1 teaspoon cinnamon – 1 teaspoon vanilla – 1/4 teaspoon fine sea salt – 1/4 freshly grated nutmeg – coconut oil, avocado oil, or vegan butter, for cooking – 8 slices crusty bread

STEP 1

Whisk ground flax and almond milk in a shallow bowl, let sit for 5 minutes.

STEP 2

Add sugar, cinnamon, vanilla, salt, and nutmeg, whisk to combine.

STEP 3

Heat cooking oil in skillet over medium heat.

STEP 4

Dip bread into mixture, fry in skillet until golden brown and crispy, about 2-3 minutes per side.

STEP 5

Repeat with remaining bread. Serve with fresh berries and maple syrup.

Tips for Making  Vegan French Toast:

It is said that the top bread to use for French Toast is Brioche, French Baguette, or Challah. I use sourdough a lot for french toast, but you can use whatever you have on hand.
