VEGAN BANANA

Pudding

INGREDIENTS

– 1/2 cup granulated sugar – 1/4 cup cornstarch – pinch sea salt – 1/2 cup full-fat canned coconut milk – 1 1/2 cups unsweetened plain almond milk – pinch turmeric powder (optional, for color) – 1 Tablespoon vanilla extract – 12 vegan vanilla wafer cookie – 2-3 banana – 2 cups 

STEP 1

Combine sugar, cornstarch, sea salt, coconut milk, almond milk, and turmeric (if using) in a saucepan.

STEP 2

Bring to a simmer over medium-high heat, stirring frequently until thickened (about 2-3 minutes).

STEP 3

Remove from heat, stir in vanilla, and let cool.

STEP 4

Layer cookies, pudding, sliced bananas, and whipped cream in jars or a dish. Refrigerate for an hour before serving.

Tips for Making  Vegan Banana Pudding:

While ripe bananas will help make the pudding cups sweeter, using a not too brown banana will also work for the pudding cup!
