fruit salad

INGREDIENTS

– 1 8- oz can pineapple tidbits, drained, reserving the juice for the dressing – 2 large apples, chopped – 1 cup red grapes, halved if they’re large – 2 bananas, sliced – 1 kiwi fruit, peeled and sliced – 4 to 6 large strawberries, chopped – 1/2 cup blueberries – 1/2 cup mandarin orange segments from about 2 mandarin orange For the dressing: – 1/4 cup reserved pineapple juice – 2 tablespoons coconut oil – 2 tablespoons maple syrup – 1/2 tablespoon lemon juice – 1 tablespoon cornstarch – 1 tablespoon water – 1/2 cup 

STEP 1

Combine pineapple juice, coconut oil, maple syrup, lemon juice, cornstarch, and water in saucepan.

STEP 2

Bring to boil, then simmer until thickened. Cool dressing completely, then stir in vegan Greek yogurt and refrigerate.

STEP 3

Add fruits to bowl and drizzle yogurt dressing over top.

STEP 4

Before serving, toss fruits with dressing until well coated.
