INGREDIENTS

– 2 Tablespoons extra-virgin olive oil – 4 ounces mushrooms diced (white, baby bella, or crimini) – 1/2 red bell pepper diced – 1/2 small yellow onion diced – 3 cloves garlic minced – 2 teaspoons smoked paprika – 1 teaspoon cumin – 1/2 teaspoon sea salt – 2 14-ounce cans black beans, drained, rinsed, and patted dry – 3/4 cup rolled oats gluten free if needed

STEP 1

Heat olive oil in a large skillet over medium heat. Add mushrooms, bell pepper, onion, and garlic. Cook for 4-5 minutes until starting to brown. Blot excess moisture with a paper towel.

STEP 2

Stir in paprika, cumin, and sea salt. Cook for another minute until fragrant.

STEP 3

Transfer the mixture to a food processor with black beans and oats. Pulse for about 30 seconds until well combined but not pureed.

STEP 4

Shape the mixture into 6 burgers and place on a baking sheet.

STEP 5

Bake in a preheated oven at 375°F for 30 minutes.
