GAzpacho recipe

sweet corn


– 3 ears fresh corn – 2 yellow bell peppers, seeded and roughly chopped – 1 yellow heirloom tomato – 1 15-oz can navy beans, drained and rinsed – 1/2 small white onion – 2 garlic cloves – 1 Serrano pepper – 1/2 cup olive oil – 1/4 cup freshly squeezed lime juice – Sea salt to taste Optional toppings: – ¼ cup fresh corn – 1 Serrano pepper, thinly sliced – 4 tbsp coconut cream – Fresh cracked black pepper – Slice of 


Add all ingredients to a blender and blend until smooth. Taste and adjust seasoning as needed.


Refrigerate for an hour. 1. Garnish with fresh corn, sliced peppers, coconut cream, pepper, and a slice of lime. Enjoy!
