SOFRITAS RECIPE

INGREDIENTS

– 1-3 chile peppers 1 large poblano or anaheim for mild, or 1-3 fresno/serrano/jalapeno for spicy – 1 Roma tomato – ½ white onion – 2 cloves garlic – 3 chipotle peppers in adobo – 3 tablespoons adobo sauce from can – 1 tablespoon tomato paste – ½ cup salsa of choice – 2 tablespoons avocado oil – 1 pound firm tofu – 2 teaspoons ground cumin – 1 teaspoon ancho chili powder – salt to taste

STEP 1

Preheat broiler to high or char peppers, tomato, onion, and garlic cloves over open flame until charred.

STEP 2

Transfer charred vegetables to blender or food processor with chipotle peppers, chipotle sauce, and salsa. Blend until smooth.

STEP 3

Heat oil in large skillet over medium heat. Add tofu, crumble with spoon, and cook until starting to crisp.

STEP 4

Add cumin and chili powder, Pour chipotle sauce into skillet, bring to low simmer for 5 minutes until thickened and combined.

Tips for Making  Vegan Sofritas:

Use dried chiles to give the dish a boost of smoky flavor. Soak them in hot water for about 10 minutes before blending them into a paste.
