zucchini bread

INGREDIENTS

– 2 Tbsp ground flax – 6 Tbsp water – 1/2 cup coconut sugar – 2 1/2 T maple syrup – 1 1/2 cups shredded zucchini squeezed in a cheesecloth or clean tea towel to get as much water out as possible (about 2 zucchinis) – 1/2 cup applesauce – 1/4 cup melted coconut oil – 1 tsp vanilla – 1/2 cup whole wheat pastry flour – 1 cup all purpose flour – 1 tsp cinnamon – 3/4 tsp baking soda – 3/4 tsp baking powder – 1/2 tsp salt – 1/2 c chopped walnuts optional

STEP 1

In a large bowl, combine ground flax and water. Set aside for 5 minutes to thicken. To the thickened flax mixture, add coconut sugar and maple syrup. Stir to combine.

STEP 2

Add shredded zucchini, applesauce, coconut oil, and vanilla. Stir until just combined, being careful not to overmix. In a small bowl, combine flours, cinnamon, baking soda, baking powder, and salt.

Tips for Making  VEGAN ZUCCHINI BREAD:

To grate your zucchini, just use a hand grater like what you’d use to shred cheese. You could also put through the shredder attachment in your food processor.
