french toast

INGREDIENTS

– 2 Tablespoons ground flax seed – 1 cup almond milk – 1 teaspoon cinnamon – 1/4 teaspoon nutmeg – 1/2 teaspoon espresso powder – 1/4 teaspoon ginger – 1/4 teaspoon ground clove – 1/8 teaspoon black pepper – 1 teaspoon vanilla – pinch sea salt – coconut oil for pan – 10 pieces of stale crusty bread such as a french, brioche, sourdough type of bread - see notes and post about bread type

STEP 1

Mix ground flax and almond milk in a shallow dish; let sit for 5 minutes.

STEP 2

Whisk in spices: cinnamon, nutmeg, espresso powder, ginger, clove, pepper, vanilla, and sea salt.

STEP 3

Quickly dip each bread slice in the mixture and cook for 2-3 minutes per side until it flips easily.

STEP 4

Keep cooked pieces warm under a towel while finishing the rest.

STEP 5

Top with desired toppings like whipped coconut cream, cinnamon, fresh fruit, maple syrup, or nuts

Tips for Making  Chai Latte Vegan French Toast:

I usually top my french toast with coconut whipped cream or my dairy-free whip made with aquafaba. Also nuts or dried fruit, berries, or cashew butter. The options really are endless!
