Blueberry

AND PEACH SALSA

INGREDIENTS

– 1 1/4 cups fresh blueberrie – 1 peach, pitted and diced – 2 Tablespoons fresh lemon juice – 2 Tablespoons chopped fresh parsley – 1/4 cup red bell pepper, diced finely – 1/2 – 1 teaspoon maple syrup – 1/4 teaspoon 

STEP 1

Pulse blueberries in a food processor until coarsely chopped.

STEP 2

Transfer to a bowl and add remaining ingredients.

STEP 3

Mix well, adjusting sweetness with maple syrup if needed. Refrigerate until serving.

Tips for Making  Blueberry and Peach Salsa:

To make chopping the peaches easier, cut them in half and remove the pit first. Then, cut each half into small cubes.
