These whole wheat chocolate chip pancakes are tender, fluffy, and packed with melty chocolate chips. They're also made wholesome with vegan ingredients!
Add the whole wheat pastry flour, oat flour, sugar, baking powder, baking soda, and salt to a mixing bowl and whisk to combine.
In a separate bowl, combine the almond milk, dairy-free yogurt, coconut oil, and vanilla extract.
Pour the wet mixture into the dry ingredients. Use a fork to mix just until combined.
Stir in the chocolate chips.
Heat a skillet over medium heat. Grease the surface with a small amount of vegan butter.
Pour the batter onto the skillet, using around 1/4 cup for each pancake. Make sure the pancakes are at least 2 inches apart.
Cook for 2 to 3 minutes or until the edges are set and bubbles appear on top. Flip and cook the other side for 1 to 2 minutes or until golden brown.
Notes
Oat flour is simply old-fashioned oats blended into a fine powder. For this recipe, you'll need to blend 1 cup of oats.
A few lumps in the batter are okay. Overmixing the batter can lead to chewy pancakes!
You can't go wrong with plant-based butter and maple syrup, but if you're feeling indulgent, top your pancake stack with vegan whipped cream and fresh strawberries! You can also microwave peanut butter until it's nice and melted and drizzle it on top of the chocolate chip pancakes for that classic chocolate peanut butter combo.
