These sweet potato waffles are ready in 15 minutes using only 2 ingredients! They're perfectly crispy and fluffy and served with Southwestern toppings.
Preheat the waffle iron to medium-high and lightly spray the top and bottom with cooking spray.
Add 1 cup of frozen sweet potato tots to the waffle iron, spreading them out evenly in a single layer. If using a Belgian waffle maker, you may need to pile on more tater tots.
Close the iron, pressing down firmly to flatten the tater tots. Cook and turn it like you would when making classic waffles, following the manufacturer's instructions.
Once the sweet potato tot waffles are brown and crispy, place a plate over the waffle and flip the waffle iron over.
Add your favorite Southwestern toppings.
Repeat with the remaining tater tots and toppings. These tater tater tot waffles are best enjoyed fresh!
Notes
When removing the vegan sweet potato waffles, use hot pads to flip the waffle iron over. I don't recommend trying to remove them with a fork or tongs, as they might just fall apart.
Make sure your waffle iron is hot before adding the sweet potato tater tots, packing them tightly. For an extra crispy sweet potato waffle, fold down one side onto the other once it begins to brown, close the iron, and toast for a few more minutes.
