  • Place all the ingredients in the blender jar as listed.
  • Blend on High speed until completely smooth.
  • Pour the mixture into your glass (you can rim it with walnuts as well), add more shredded coconut and chopped walnuts on top, and you're done.

Notes

  • Feel free to use frozen pineapple chunks to save on prep time and get a perfectly chilled smoothie without the need for ice cubes!
  • If you think your blender might struggle with the carrots, shred them beforehand.
  • Add more non-dairy milk if your carrot cake smoothie is too thick for your liking. But if you prefer a thicker blend, a frozen banana should do the trick!
