This pineapple carrot smoothie is packed with wholesome ingredients and tastes like your favorite carrot cake. Best of all, it only takes 5 minutes to make!
Place all the ingredients in the blender jar as listed.
Blend on High speed until completely smooth.
Pour the mixture into your glass (you can rim it with walnuts as well), add more shredded coconut and chopped walnuts on top, and you're done.
Notes
Feel free to use frozen pineapple chunks to save on prep time and get a perfectly chilled smoothie without the need for ice cubes!
If you think your blender might struggle with the carrots, shred them beforehand.
Add more non-dairy milk if your carrot cake smoothie is too thick for your liking. But if you prefer a thicker blend, a frozen banana should do the trick!
