Cut off the top and bottom of the pineapple, then slice off the outer peel and trim each eye. Slice the pineapple flesh into rings. Optionally, you can core the pineapple slices and cut them into smaller chunks.
Slice the cucumber into smaller pieces.
Place the pineapple chunks and cucumber slices into a juicer.
Juice until smooth.
Taste the juice, and add more pineapple or cucumber if desired.
Pour the pineapple and cucumber juice into a glass with ice cubes. Garnish with a slice of cucumber. Enjoy!

If you don't like the texture of the pulp, strain the pineapple and cucumber mixture through cheesecloth. However, it's perfectly fine to skip this step for added fiber.
You can make pineapple and cucumber juice without a juicer! Just blend the ingredients until smooth. You can even freeze the ingredients, so you won't need to serve the juice with ice cubes.
Use English cucumbers! They are mildly sweet with small seeds, and their thin skin means you won't need to peel them for your homemade pineapple cucumber juice.
This cucumber and pineapple juice is best enjoyed fresh. But for leftovers or make-ahead, transfer it to a covered container and store it in the fridge for 3 to 4 days. You can also freeze the juice as flavored ice cubes and use them for smoothies.
