Using a metal cookie cutter, cut out hearts from the potato slices.
In a large bowl, toss the potatoes with olive oil and seasonings until well coated.
Place the heart shaped potatoes in a single layer in the air fryer basket, making sure there is space between them.
Roast at 400°F for 10 to 12 minutes, turning the potato pieces or shaking the basket halfway through to ensure even cooking.

Want the crispiest roasted heart potatoes? Preheat the air fryer for 5 minutes, and remember not to overcrowd the air fryer basket when you roast potatoes.
You can transfer potatoes to an airtight container and store them in the fridge for up to 5 days or in the freezer for up to 6 months. To serve, air fry the leftover potatoes for 5 to 6 minutes at 400°F. If frozen, thaw overnight before reheating.
