These granola bar bites are packed with oats, dates, pineapple, coconut, and white chocolate chips. They're wholesome, satisfying, and require no baking!
Pulse the pitted dates until they become a paste. Gradually add almond milk and pulse until smooth. Set aside.
In a large bowl, combine the oats, ground flaxseed, coconut flakes, dried pineapple, and white chocolate chips.
Add the date sauce and melted coconut oil to the oat mixture. Stir until completely incorporated.
Scoop the mixture into tablespoon-sized balls. Arrange them on a parchment-lined baking sheet and refrigerate for at least an hour to set.
Notes
For perfectly chewy granola bar bites, use dates that are soft, sticky, and fresh. If they're dry, soak them in warm water for 10 minutes, then drain them before use.
If you find bigger granola bars more satisfying than balls, press the granola mixture into a parchment-lined baking pan, cover it with another piece of parchment paper, and firmly press the mixture to the sides of the pan. Flatten and smoothen the top, chill for 1 hour, then slice into bars.
Don't cut the chilling time for these tropical granola bites! Letting them set in the fridge for at least 1 hour will give them the best chewy texture and also keep them from falling apart.
