These chocolate covered rice cakes are no-bake treats that combine crisp rice cakes and rich dark chocolate. They'll go well with just about any topping!
Place chocolate chips in a medium or large bowl. Microwave for 1 minute, stir well, then microwave again for only 30 seconds. Stir and repeat for another 30 seconds, if needed, until you attain a spreadable consistency.
Spread the melted chocolate onto a rice cake with a spoon. Add toppings of choice and set on a cooling rack until the chocolate hardens. Repeat with the remaining ingredients. Serve and enjoy your chocolate covered rice cakes!

Be careful not to burn the chocolate when melting, or it can taste bitter. After the first minute in the microwave, stir it well, and heat it for only 30 seconds at a time until the chocolate is smooth and completely melted. You can also use the bain-marie method!
Experiment with different toppings. Top the rice cakes with almond butter before coating them with chocolate, add a layer of raspberry jam, or decorate the chocolate rice cakes with a drizzle of caramel sauce. Shredded coconut and cacao nibs will also be great on these rice cake desserts.
Instead of spreading the melted chocolate on top of the rice cakes, you can dip the rice cakes in chocolate and just spread the chocolate evenly with a butter knife. This method is perfect when layering different toppings, like different kinds of nut butter and jam.
