Ingredients

Instructions

  • Place all of the ingredients for the energy bites in a food processor and pulse until combined.

  • Roll into 16 large or 32 small balls and place on a parchment-lined baking sheet.

  • Melt the white chocolate chips and coconut oil in a small saucepan over low heat or microwave them in a glass bowl at 15-second intervals until melted and smooth. Dip each energy bite into the melted chocolate using a toothpick.

  • Roll the coated energy bites through the shredded coconut.

  • Refrigerate until set.

Notes

  • If the dough sticks to your hands too much while rolling, dampen them slightly before beginning to roll. Just be sure your hands aren't too wet, or that could affect the consistency of the dough. You may need to dampen again every few balls. This should help keep your hands cleaner and make it easier to roll.
  • Store in an airtight container in the refrigerator for up to 5 days.
