This blueberry peach salsa features summer's best fruits, creating an amazing texture and balance of tart and sweet flavors. It's perfect for picnics and BBQs!
Add the blueberries to the food processor and pulse 4 to 5 times until they're coarsely chopped. Do not over-chop. Keep some blueberries whole.
Transfer the blueberries to a bowl and add the remaining ingredients.
Mix well. Taste and add more maple syrup if preferred.
Cover the blueberry peach salsa and refrigerate until ready to serve.
Notes
The tastiest blueberries for this salsa are plump with deep purple skin. As for the peach, select one that smells sweet but still feels a bit firm for the best flavor and texture.
Wash the peach thoroughly and cut around it. Twist to separate the two halves. Use the tip of your knife to dislodge the pit. Then, simply cut the peach halves into small cubes.
If you want a more refined blueberry peach salsa, strain out the blueberry seeds after pulsing the berries in the food processor.
