  • Add the dry ingredients to a large mixing bowl and mix. Set aside.

  • In another mixing bowl, add the applesauce, apple cider vinegar, vegan butter, and plant-based yogurt. Mix with a hand mixer.

  • Slowly fold in the wet ingredients to the flour mixture. Do not overmix.

  • Cover the bowl with plastic wrap. Chill in the fridge for at least 2 hours.
  • Preheat the oven to 350°F and grease your donut baking pan.
  • Fill each ring with the donut batter. Do not go over the edges.

  • Allow the donuts to cool for 5 minutes.
  • Meanwhile, combine the sugar and cinnamon for the topping.
  • Place the baked apple cider donuts upside down in the cinnamon mixture. Serve and enjoy!

Notes

  • If you don't have apple pie spice, just combine 1/2 teaspoon of ground cinnamon, 1/4 teaspoon of ground nutmeg, and 1/4 teaspoon of allspice or cardamom.
  • You can make these baked apple cider donuts gluten-free! Swap the all-purpose flour with gluten-free flour.
  • Do not overmix the batter, or the donuts will be tough.
  • You can make the batter up to 24 hours ahead.
  • Another way to fill the donut pan is with a piping bag. This method is quicker and less messy than pouring the batter into the donut pan.
