Ingredients

  • 1 bag Cinnamon Sugar Pita Chips (7.5 ounces)
  • 1 cup strawberries diced
  • 1 cup mandarin oranges halved
  • 1 mango diced
  • 1/2 pineapple cubed (about 1 cup)
  • 2 kiwis sliced and halved
  • 3/4 cup blueberries
  • 1 cup red or purple grapes halved
  • 2 oz dark chocolate melted

For Vegan Whipped Topping

  • 1 can coconut milk solids refrigerated at least 24 hours
  • 1 Tbsp agave or pure maple syrup

Instructions

  • Line a plate or tray with cinnamon pita chips
  • Top with diced fruit in a rainbow fashion. Red, Orange, Yellow, Green, Blue, Indigo/Violet.

To make whipped topping

  • In a blender or food processor, whip the solids from your can of coconut cream, discarding liquids or saving for smoothies. Add in the agave and whip until completely combined.
  • Top fruit with whipped topping and drizzled dark chocolate.
