Healthy Whole-Wheat Pancakes

Ingredients

  • 1 1/4 cups whole wheat flour
  • 1/4 cup ground flaxmeal
  • 2 teaspoons baking powder
  • 1 egg
  • 1 cup milk of your choice (I used unsweetened almond milk)
  • 1/2 teaspoon salt
  • 1 tablespoon brown sugar
  • 1/2 teaspoon vanilla
  • dash or two of cinnamon
  • 1 cup mixed fresh berries

Instructions

  • Mix together the flour, flaxmeal, and baking soda in a bowl and set aside.
  • In another bowl, beat together the egg, milk, salt, cinnamon, vanilla, and brown sugar until mixed well. Stir in the dry ingredients.
  • Place a skillet or electric griddle over medium heat and spray lightly with cooking spray.
  • Drop 1/4 cup of the batter on the pan per pancake. Cook until bubbly, about 1 1/2 minutes. Flip and continue cooking until golden brown.
  • Serve with fresh berries and syrup
