Healthy Carrot Raisin Muffins

Ingredients

  • 1/2 cup All-Purpose Flour
  • 1/2 cup Whole Wheat Pastry Flour
  • 1/2 cup ground flaxseed
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon grated nutmeg
  • 1/3 cup sugar
  • 1 cup plain soy , oat, or almond milk
  • 1/3 cup applesauce
  • 1 teaspoon vanilla extract
  • 2 cups grated carrot (about 4 medium sized carrots)
  • 3/4 cup raisins soaked in warm water for 10 minutes , to plump (soaking is optional)
  • 1/2 cup chopped pecans or walnuts , optional

Instructions

  • Preheat the oven to 400 degrees F. Line a muffin pan with baking cups or lightly grease with coconut oil.
  • Mix the flours, flaxseed, baking soda, cinnamon, nutmeg, and sugar.
  • Create a small well in the center and add in the milk, applesauce, and vanilla. Mix until there are no more clumps of flour or flaxseed.
  • Fold in carrots, then raisins and pecans, if using.
  • Fill the muffin cups full. Bake for 20 minutes or until a toothpick comes out clean.
