PEACH MUFFINS

INGREDIENTS

– 2 Tablespoons ground flax seed – 6 Tablespoons water – 2 cups whole wheat pastry flour – 1 1/2 teaspoons baking powder – 1 1/2 teaspoons baking soda – 1/2 teaspoon salt – 2 Tablespoons unsweetened applesauce – 1 teaspoons vanilla extract – ½ c honey – 1 cup plain nonfat Greek yogurt – 1 cup almond milk – 2-3 fresh peaches , peeled & diced (or about 2 cups of canned peaches, diced)

STEP 1

Combine ground flax and water in a small bowl; set aside. Whisk flour, baking powder, baking soda, and salt in a medium bowl. In a large bowl, mix applesauce, flax mixture, vanilla, honey, and yogurt until smooth.

STEP 2

Alternate adding the flour mixture and milk to the wet ingredients, beginning and ending with the flour. Fold in the peaches.

STEP 3

Divide batter between muffin cups. Bake for 29-33 minutes, or until a toothpick comes out clean. Cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.

There are always the peaches you have canned and will be able to use all winter long. Especially when you’re craving a Vegan Peach Cobbler!
