strawberry vegan scones


– 2 cups whole wheat pastry flour – 1 Tbsp white sugar – 2 tsp baking powder – 1/2 tsp baking soda – 1/2 tsp salt – 1/2 cup vegan butter cut into square – 1/2 cup non-dairy milk (i like almond) – 1 Tbsp lemon juice – 1/2 cup freeze-dried strawberries roughly chopped – 1/4 cup non-dairy dark chocolate chip


In a large bowl, mix flour, sugar, baking powder, baking soda, and salt. Cut in the butter until the mixture is crumbly with pea-sized butter pieces.


In a small bowl, mix non-dairy milk and lemon juice, then add to dry ingredients. Mix until just combined.


Fold in strawberries and chocolate gently.  On a floured surface, form the dough into a 1-inch thick circle. Cut into 8 triangles.


Place triangles on the baking sheet and bake for 14-17 minutes, until tops are firm. Serve immediately or store in an airtight container for a few days.

You can make these sweet and savory by adding a few different spices to your dough and even tossing in some dairy-free cheese to the mixture.
