VEGAN SCONES

INGREDIENTS

– 2 cups gluten-free all-purpose flour – 2 tablespoons white sugar – 2 teaspoons baking powder – ½ teaspoon baking soda – ½ teaspoon salt – ½ cup frozen vegan butter grated – ½ cup plain unsweetened almond milk – 1 tablespoon lemon juice

STEP 1

In a large bowl, sift together flour, sugar, baking powder, baking soda, and sea salt. Add grated frozen butter and mix until crumbly.

STEP 2

In a separate bowl, mix almond milk and lemon juice. Make a well in the dry ingredients, pour in almond milk mixture, and mix well. Knead briefly.

STEP 3

Lightly flour a work surface, place dough on top, and form into a 1-inch thick circle. Cut into 6 triangles and place on baking sheet.

STEP 4

Bake for 14-17 minutes until slightly risen and firm on top. Serve immediately or store in an airtight container.
