Royal Icing Without Egg

INGREDIENTS

– 4.5 cups confectioners’ sugar (powdered sugar) – 1 Tablespoon cornstarch (cornflour in the UK) – 1/2 teaspoon xanthan gum or arrowroot powder – 1 pinch salt – 1/3 cup water – food coloring (optional)

STEP 1

Combine powdered sugar, cornstarch, and xanthan gum. Mix well.

STEP 2

Slowly add 1/3 cup water while mixing until sugar is fully incorporated. Beat for 2 minutes until thick and stiff.

STEP 3

Adjust consistency with water if needed.

STEP 4

Divide and color icing as desired. Decorate cookies.

Tips for Making  Vegan Royal Icing:

– Store this icing in an airtight container in the refrigerator. It should keep well for up to 1 month. After storage, beat the icing again for a few minutes to make it smooth again before using.
