VEGAN

INGREDIENTS

– 2 Tablespoons tapioca flour or corn starch – 2 Tablespoons powdered sugar – 5 Tablespoons pea protein powder with at least 90% protein isolate – 2 teaspoons baking powder – 1/4 teaspoon xanthan gum – 3/4 cup cold water Sugar Syrup Mixture – 2 cups sugar – 1 Tablespoon agar powder not the flake – 1 cup water

STEP 1

Combine powdered sugar and tapioca flour in a small bowl. Coat an 8x8 pan with the mixture, tapping off excess. In a stand mixer bowl, mix pea protein, baking powder, and xanthan gum. Add cold water and whisk for 10 minutes until stiff peaks form.

STEP 2

In a large pot, combine sugar and agar powder. Heat on high until reaching 225-227°F.

STEP 3

Quickly pour hot sugar mixture into pea protein mixture while whisking at high speed. Mix for 10 minutes until thick and fluffy.

STEP 4

Pour mixture into prepared pan and spread evenly. Chillin the refrigerator for 1 hour. Turn out onto a cutting board coated with powdered sugar mixture. Cut into squares and coat with more powdered sugar. Enjoy!
