breaded mushrooms

INGREDIENTS

– 8 oz cremini mushrooms, cleaned and dried – ⅓ cup Italian-style panko bread crumbs – 3 tbsp grated vegan Parmesan cheese – ⅓ cup unsweetened plain almond milk – ½ cup all-purpose flour – 2 cloves garlic, very finely minced – ½ tsp onion powder – ½ tsp sea salt – ¼ tsp freshly cracked black pepper – ¼ tsp cayenne pepper – Spray oil Creamy Italian Dipping Sauce: – ½ cup vegan mayonnaise – 1 tbsp fresh chives, minced – 1 clove garlic, very finely minced – ½ teaspoon red wine vinegar – Sea salt to taste – Freshly cracked pepper to taste

STEP 1

Preheat oven to 425°F and grease a baking sheet.

STEP 2

Combine dipping sauce ingredients and refrigerate.

STEP 3

Mix panko and parmesan. Whisk almond milk, flour, and spices.

STEP 4

Dip mushrooms in batter, then coat with panko mixture.

STEP 5

Arrange on baking sheet and bake for 20 minutes. Serve with dipping sauce. Enjoy!

Tips for Making  Vegan Breaded Mushrooms:

– Wipe the mushrooms with a damp paper towel to clean them. Then, dry them thoroughly; no one wants soggy mushrooms!
